Burger:

  • 1 – pound of ground venison (I put no filler in my venison until I’m ready to cook)
  • 6 strips of crumble bacon (in meat) / and 1 to 2 extra pieces of bacon per burger for topping after
  •  1 to 2oz of Blue cheese crumbles (in meat)

  • 6 to 7 shakes of Worcestershire

  • 3/4 of 1 beaten egg

Sriracha Garlic Mayo:

  • 1/4 teaspoon of Garlic Paste
  • 1/2 cup mayo
  • Sriracha

Venison Volcano Burger

Hey all! If you’re reading this, you’re about to embark on a journey to a place your taste buds have never been before! This burger recipe is full of flavor and punches your tongue a layer at a time with the sweetness of the pineapple, bitterness of the blue cheese, saltiness of the bacon and finishing with the spicy Sriracha Garlic Mayo! I truly believe that this burger is one of my all time favorite recipes! I hope you enjoy!

Recipe:

  1. Pad out meat in bowl and put a (medium sprinkle of onion powder) on the surface of the meat. (repeat this one step twice)
  2. Thoroughly mix meat together with hands spreading blue cheese and bacon.
  3. Add 6 to 7 shakes of Worcestershire sauce and 3/4 of a beaten egg and mix thoroughly.
  4. Pad meat into 1/3 to 1/4 lb patties and refrigerate for 10 to 15 min.
  5. Let patties sit at room temp for at least 5 min before grilling.

Sriracha Garlic Mayo:

  • 1/4 teaspoon of Garlic Paste
  • 1/2 cup mayo
  • Add Sriracha to taste (generally around 1/8 of a cup or until its a light orange color)

Sliced Pineapple: 

Make sure to use cored pineapple you can buy it pre-cored or core it yourself which is less expensive but requires a bit more time.

Lightly baste pineapple slices with EVOO (extra virgin olive oil) or whatever oil you prefer. EVOO is the healthiest route but HEY! Who’s counting!

After grilling burgers grill pineapple for 1 minute per side on medium high heat (you can also do this step when melting the cheese on the burger)

Grilling Burgers:

Grill the burgers for 5 to 6 minutes per side on medium heat (with a 1/3lb burger) add mild cheddar cheese to burger and begin grilling pineapple for last 2 min

The Finished Product:

Add remaining bacon slices to burger, along with grilled pineapple slices and Sriracha Garlic Mayo and be prepared for a trip to flavor town!!
